Gluten-free Banana Oatmeal Bars

Bananas are one of my go-to fruits. They’re healthy, delicious, affordable, and easy to pack or carry. I often add some peanut butter for a tasty snack and, at times, I’ll throw jelly on top of that for a makeshift PB&J. Additionally, this versatile fruit is the perfect ingredient to top a bowl of cereal or add to a smoothie or smoothie bowl. All these options lead me to buy large bunches of bananas with each visit to the grocery store.

There are times, however, with all this fruit’s uses swirling in my head, that I buy too many. We recently had family over, and a few days after they left, I noticed the bunch of leftover brown bananas in our fruit bowl. Thankfully, having extra is never bad; it’s just an excuse to start baking. So many options exist for banana-flavored baked goods, but one of my favorites is this gluten-free banana oatmeal bar recipe.

This delicious bar makes a tasty breakfast bar as is or top it with frosting or fruit to serve as a dessert.

Ingredients

  • 3 overripe smashed bananas

  • 1/2 cup of honey

  • 4 eggs

  • 2 1/2 cups of gluten-free rolled oats (I use Bob’s Red Mill Gluten-free Quick Cooking Whole Grain Rolled Oats)

  • 4 tablespoons of canola or vegetable oil

  • 2 teaspoons of baking soda

  • 1/2 cup of chopped walnuts

  • 1/4 cup of chocolate chips

Directions

  • Preheat the oven to 350 degrees (F)
  • Grease a 13 in. X 9 in. X 2 in. cake pan.
  • Mash the bananas in a large mixing bowl.
  • Add the rest of the ingredients to the mashed bananas and mix.
  • Spoon the batter into the greased pan.
  • Bake for 25 minutes.
  • Remove from oven and let cool before cutting.
  • Serve as is or top with your favorite frosting or fruit for a tasty dessert bar.
